When life affords you the time to make dinner...

I have a lot of catching up to do. In a lot of different respects. Academically, for one. With 8 classes to keep up with, I am not even close to the same page as the professors. And with exams now imminently looming in the near future... catch up seems all the more imperative. For another, telling all of you about my life. A lot has continued to happen over here and I have been delinquent in sharing. I will... soon! But I do have my first test tomorrow. In Latin. A language that has continual battles with me. So, if you'll forgive me for being neglectful in informing you once again... and perhaps say a prayer or two for my poor aging memory and all those verbs?

But, in keeping with a common thread throughout my sharings - FOOD! - I want to tell you, again, about my dinner. I don't think that I was unable to cook before, in terms of ability... just that I literally was lucky to feed myself at all due to my insane pace of life. Several of you can attest to that from first-hand experience. But, maybe it is Italy, maybe it is time, maybe it is a number of factors, but I am putting more and more effort and creativity into my meal preparation - and it is so fun!! I probably spend too much time feeding myself, but I really do enjoy it. I'm also trying to let go of my food prejudices and picky nature and try things I wouldn't normally have eaten before. Mom - you would be proud. I voluntarily buy this pizza here that is covered in whole tomatoes, basil and mozzarella. Sounds totally normal to all of you, but my mother knows that I DO NOT EAT TOMATOES. Yes, I know... tomatoes. But I love this pizza.

Anyway... tonight I cooked pasta (typical) with a red and hot pepper pesto cream sauce with sausage and fresh spinach, garnished with big fat shavings of fresh parmigiano. It is so good! Seriously. My mom would also say I don't eat peppers. I guess I still don't since these are all ground up and barely pepper chunks anymore, but... it's a step right?

I haven't actually eaten it yet. I was waiting for my tea to steep... and it has - so I'm off to Latin study and dinner.

  1. "Aging memory?" "Aging Memory"? AGING MEMORY??? What are you talking about?!? You crack me up! Hey - take it from a Latin Minor Major - 20 mins a day, everyday. Works like magic, I'm not kIdding. then again, all I can translate now, is "vita bella est". So maybe don't take it from me! Glad you're having fun in the kitchen! Much love from Erie!
